This is an Arabic vegetable stew made in layers and served with steamed rice or bulgur. My Damascene sister in law recently showed me how to make this. It is delicious. The addition of ghee or rendered butter at the end of the cooking is a traditional Damascene style of cooking; however, these days these dishes are made without the extra fat.

Modified by the Filipinos from Central to South American influences, this fragrant soup is made with ground beef, onions, tomatoes, potatoes, and lots of garlic. Serve as a stew or generously over rice.

This Indian dish combines fresh spinach and ricotta in a creamy curry. Use paneer if you can find it! It is absolutely wonderful with basmati rice or naan (Indian flat bread). The key is in the spices, which you can find at an Indian grocery.

I got this recipe from my sister-in-law who served this with grilled sword fish. It has been a hit in my family ever since. I find the 8 ounce bottle of dressing is enough, but some people may want more, which won't hurt the salad.

This marvelous sauce is the reason you grow your own tomatoes. Dice a few and add minced garlic, fresh basil and the best quality olive oil you can buy. Let the heady mixture rest at room temperature for a few hours, then toss with hot pasta.

Yes, there is a lot of cider vinegar in this tomato-sauced chicken, but its fruitiness intensifies in cooking, mellowing the tartness considerably. Give it a whirl.

This is a simple and easy to toss together recipe using cauliflower. Serve this dish with Indian breads such as thin rotis or naans - even a pita bread will do! Garnish with cilantro if you'd like. Asofoetida can be found in some grocery stores, but will most likely be found in an Indian grocery store, it is often called 'hing'.
