Blueberry Salsa

Submitted by: Liz Rosenfeld
Blueberries and spice - this salsa is very nice. Crushed and whole blueberries are combined with jalapeno pepper, red onion, and fresh lime juice to make a tasty salsa to serve with tortilla chips or as a topping for grilled meats.

Looking for a refreshing salsa for a warm summer evening? This is our favorite. Serve with tortilla chips. This is also fantastic served on white fish. I often use a canned jalapeno instead of fresh.

Tart and refreshing with a smooth, creamy, meringue-like consistency. Blueberries can be omitted if necessary, but it won't be nearly as good!

My Aunt Betty bakes many times each Christmas, but I look forward to these mouth-watering muffins the most. She gives me enough so that I can freeze and enjoy them for weeks.
