Beefy Vegetable Soup

"A hearty vegetable soup made with beef broth to give it extra oomph. You can substitute chicken or vegetable broth for the beef broth if desired. Serve with thick slices of grainy bread for an easy and satisfying meal."

10 cups beef broth
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes
1 1/2 cups diced carrots
1 1/2 cups diced potatoes
1 cup chopped celery
1/2 cup chopped onion
1 cup frozen corn kernels
1 cup chopped fresh green beans
1/4 tablespoon ground black pepper
1/2 teaspoon salt
1 1/2 cups seashell pasta
1 cup shredded Cheddar cheese

DIRECTIONS
In a large saucepan, combine the broth, tomato sauce, chopped tomatoes with juice, carrots, potatoes, celery, onion, corn, green beans, pepper and salt. Bring to a boil over high heat. Reduce heat to medium-low, cover and simmer for 15 minutes.
Stir in pasta and cook for an aditional 15 to 25 minutes or until pasta is tender. Adjust seasoning and serve hot with a sprinkle of Cheddar cheese on top.

Thank you for the great recipe! It tasted awesome!! However, I did use some of the suggestions left by others. I added some Tabasco (Which added to the flavor,and didnt give a big kick). I also added a few Bay Leaves, and then made the noodles seperately. Due to the soup simmering. It wouldve made the noodles way too mushy. I also made grilled cheese to go with it. Just a really good recipe.

The soup was excellent, but next time I will leave out the pasta....gets too mushy. I'll prepare my pasta and then everyone can add however much pasta they want to their individual bowls.

I changed the recipe and added 6 cups of beef broth. I also omited the vegtables and I added frozen vegtable mix, can of diced potatoes, and chopped up onion. I used no yolk egg noodles. I also added 4 tablespoons of tabasco sauce. I sprinkled parmeson cheese on the top. Very yummy.

Great soup. Additions: Strips of chuck roast(1 lb.) Browned in 1 tbsp olive oil, 8-10 mushrooms cut into chunks, 2 cloves of garlic, 1/2 lb of asparagus (break into 1 inch pieces), 2-3 turnips diced. Cook seashells separate and add when served. Thanks Lalena!!!!!

We *loved this recipe! Very kid friendly with on-hand frugal ingredients and easy and delicious! Even my extremely picky 2 year old and husband ate it, which says a lot.

This has turned out to be one of our favorite soup recipes. What I like to do is add a browned and cut-up sirloin steak, a bay leaf, basil, garlic and oregano. Quick, easy, hearty and delicious! Thanks, Lalena.

We love it. I simmer stew meat to add and also put in mushrooms and a few dashes of seasoning. The kids love when I use the Crazy Mac vegetable pasta. I just add it before serving so it's not mushy. I usually can some for later in the week.
