Wonderful! I omitted tarragon and cooked my onions in butter instead of fat. I also added 1 and a half cups sharp cheddar. Tasted so great even my picky son loved it and asked for seconds!

I wasn't going to try this recipe because of how difficult it seemed and how many ingredients were involved, but it fed everyone and everyone was sad when it was all gone.

I have never had potato soup except for out of a can, and honestly I thought it was horrible. So I decided to try this recipe and I thought it was great and so did my husband. I did make a few changes. I used half and half instead of the heavy cream and added some chives with the cilantro and just a pinch of the tarragon leaves. It was really good. I also added about a cup of shredded cheddar at the end and garnished my bowl with sour cream. This recipe takes some work, but taste really well.

Used more cream then recipe called for and added some carrots. My partner loved it and said it reminded him of his mother's! Can't get better than that!

This is the only potato soup I make. It does take a little extra effort, but it is sooooo worth it. My family loved it, and still does. Been making it for several years. The kids are now married with families of their own, and this is a request I get when they come for a visit. Crackers or homemade biscuits make it even better. I have made it using bouillon cubes even, and it is great. Have also made it with turkey bacon, and it wasn't even noticed by anyone.

I absolutely loved this recipe! My mom and I have been looking for a potato soup recipe for a long time. Thank You so much. Not only is this easy, but my whole family loved it! The only changes I made were that I added chives instead of tarragon & cilantro, used light cream, and added carrots. I will be making this one again & again! Thanks again!!!

Wonderful and so easy! I also added a couple of chopped carrots to the veggies. Also, I used 2% milk and no butter and flour. I just thickened with an immersible blender when the potatoes were done, leaving it a little chunky. I also added a couple of cups of shredded sharp cheddar at the end. We enjoyed this with some garlic toast.

I never ate tarragon before so I put it in and I think I messed it up. Don't really like the taste of that herb. This might be better without the tarragon. I guess it's a matter of taste. We don't use that much here in Cajun Country! Sorry....

Added chopped leeks instead of onion. This soup is excellent, but I would add less tarragon or skip altogether.

This soup is incredible - rich, creamy and utterly delicious. We all loved it. I used butter instead of bacon grease, omitted the bacon, and, since I didn't have cilantro, used 1 T. each of chives and parsley. I can't wait to make it again!
