Vermont

Vermont was a French possession until 1763 when it became a British colony, one of the original thirteen. French Canadians, along with English, Irish, and Scots, were the first Europeans to settle the Green Mountain State. Incidentally, “green mountain” is montagne verte in French. Hence, Vermont. Vermont is the only New England state without access to the Atlantic Ocean, but lacking that, Lake Champlain does form a long (and lovely) border with New York to the west. Vermont is known for its maple syrup and its cheese and dairy industry. The sugar maple is Vermont’s state tree. The brook trout (a cool-water stream fish) and the walleye pike (a warm-water lake fish) share the title of state fish. The apple has earned dual honors, being named Vermont’s state fruit while also receiving props for being the key ingredient in the state pie. To eat apple pie in the true Vermont style, don’t forget a nice slice of Cheddar and a scoop of Vermont vanilla ice cream. A classic accompaniment to Vermont Cheddar are the common crackers sold at country stores. Sample them crushed over a bowl New England clam chowder, as well.

About that "home town" above -- I'm actually from everywhere (except the South) in the US. I picked NY because I've spent the most time there, but I could just as easily have picked any one of a number of cities or towns across the US. They've all influenced my cooking, of course -- there's a lot to be said for that common regional "street vendor" -type food, across the country and around the world. Pad thai or a cheese steak finished off with an ice, a pirozhki or a Chicago hot dog -- that common food is its own real delight.

Slow Cooker Chicken and Dumplings

This recipe got great reviews from my family. I did make a few small changes. I seasoned the chicken with salt, pepper and paprika. Once I put the biscuits on the chicken I took the liner out of the crock pot and finished it in the oven for about 15 minutes on 350. It made it more like a chicken and biscuits. Really good. thanks.

Great flavor! Good idea to cook the creasant rolls 4 minutes less than actual time. I spread the dough right around the edge of the pan for side crust as well.

Simply Divine Meat Loaf with Spinach

This recipe is easy and very good. Only change I made was to add two cups of spinach instead of one. Served it with "Crockery Cooking" gravy mix (first ingredient in mix is beef with broth). Excellent and even better the next day.
