Chocolate Chip Banana Muffins

First off, I only used 1/4 of the oil. I also added 2 tablespoons of flax seeds to make it a bit more healthy, and also added about a teaspoon of cinnamon, and some quick oats to top the muffins before baking. They came out great! Super subtle sweetness. I made the mistake of using milk chocolate chips, which I now understand sink to the bottom of the muffin. But it's like an added surprise.

Grandma 's Egg Custard Pie

I made this for a sick friend who was craving custard. Stuck to the recipe but added one egg yolk left over from the egg white wash on the crust, as others did. Used half milk, half 1/2 'n 1/2. She raved so much I have made 3 more pies since! Can't get enough of it! Thanks, Grandma!!!

Easy Pasta Casserole

I did not have high expectations for this. A sick friend gave me some hamburg and rotini and asked me to make something for her and her husband. I found this recipe, added chopped onions, minced garlic, salt and cumin to the meat. Used 1 jar of Newman's Marinara Sauce, 1 large can of tomato sauce, and one large can of diced tomatoes. I added a container of sliced baby portabello mushrooms. Mixed it all with the cooked pasta, and covered generously with lots of mozzarella. There was plenty because I doubled the recipe, so my husband I got to eat it, too, and so did two of our neighbors! I could not believe how tasty and filling it was. And so easy to fix! This is now on my regular schedule.....
