Eggplant Sandwiches

This is wonderful, and I like the eggplant all on it's own as well. I will make this often. Tip - japanese eggplant are MUCH better (less bitter) than regular eggplant.

Buffalo Chicken Dip

Fantastic! I use blue cheese dressing instead of ranch, and used BW3's spicy garlic sauce and it's delish!
