Ontario

Ontario sits between the Great Lakes and Hudson Bay. No other Canadian province touches upon even a single Great Lake; Ontario touches upon all but Lake Michigan. Only Quebec province is larger, and no province is more populous. Ontario is one of four original provinces that entered into Confederation in 1867. After the American Revolution, many Americans loyal to the English crown fled to Canada. These new arrivals introduced American foods into Canadian cuisine: baked beans, fried chicken, and johnnycakes. Recently, immigration has expanded to include folks from all over the world. Canada’s largest city, Toronto, is a cosmopolitan and multicultural city in southern Ontario. Hungry Torontonians enjoy endless authentic ethnic food options. Ontario is orchard, berry, and wine country. Wild rice, collected along the shores of Ontario lakes, goes into casseroles, stews, and soups. Mushrooms, maple syrup, Cheddar cheese, farmed trout, and much of the pork that produces back bacon (a.k.a. Canadian bacon) comes from Ontario.

About me:
I'm 25 yrs old, and I'm a political philosophy major. I also work full-time at a commercial real estate firm. When I do find time to cook, I love trying new recipes, and throwing dinner parties for friends. I can't wait to have a huge kitchen and dining room someday, but for now I'll have to content myself with my cozy galley kitchen.

Baked Orange Roughy with Veggies

Reviewed on Oct. 6, 2008 by ANJACKSON
What a fantastic dish! I used a red snapper filet and did not have orange juice, so subbed lemon juice as noted by others. I also used evoo in place of the butter and minced a clove of garlic into my veggie mix. I did leave out the green pepper and used fresh chives in place of the green onion. This turned out so well, such a nice light dish and thanks to naples34102, served over Brazilian White Rice...so yummy!

Brazilian White Rice

Reviewed on Oct. 6, 2008 by ANJACKSON
What a fantastic and simple, yet very tasty dish...such a boost in flavour for plain white rice! I cut the recipe in half and subbed evoo for the veg oil, used green onions as they were in my fridge. This went perfectly with Baked Orange Roughy with Veggies (from this site) and some steamed carrots. Thanks so much for sharing!

Fluffy Whole Wheat Biscuits

Reviewed on Oct. 6, 2008 by WILDWOMAN71
These were pretty good. Very quick, but lacked a little in flavor, however everyone can change it to their own tastes. I made 1 1/2 of the recipe, using 1 3/4 cups whole wheat flour, and 1 1/4 bread flour. Added in some triple cheddar shredded cheese but maybe not enough. Also, didn't roll them out but made them drop biscuits. Everyone loved them, but again still needed more flavor. Will make again for sure!!
